I love to cook, but I like my recipes to be simple, easy to follow without too many or unusual ingredients........  So as I discover recipes that I find myself making over and over, I know they meet my cooking style and taste requirements!

Soups

cabbage soup

Easy Cabbage SoupMakes enough for two days and tastes even better the second day!  Since there isn't any meat or dairy  in the soup, the pot can just remain sitting covered on top of the stove ready to reheat.  Wonderful with fresh grated Parmesan on top for serving.


 

Tuscan Farro Soup - Hearty and satisfying!  Serve with some crusty bread and a salad for a full meal.

Braised Escarole - I was not a fan of escarole until I found this recipe!  You can also throw in other dark greens with it.

Basmati Rice w/ Pomegranate and Mint- Perfect late fall dish when pomegranates arrive and mint is having its last hurrah.
